How to make the best ever whipped potatoes
Getting the best whipped potatoes at home is not that hard. In fact, it is down right easy once you know a few secrets. First is the selecting of the proper spud. Did you know that of all the hundreds of varieties of potatoes grown throughout the world, 99% of them are related to the potatoes native to Chile. But with all that variety, which is the best spud for mashing? The answer lies in the starch. The best way to group potatoes is by their starch content. The russet potato is high in starch and therefore best for mashing or whipping or frying. So, you have your russet potatoes all washed and ready. But how do you cook them? Do you bake them or steam or boil them? Well, for whipped potatoes, the best option is to peel them, cut them into similar sized pieces (important) and either steam or boil them. If you are going the boiling route, make sure to put the potatoes in cold water and bring them to a boil. Then immediately reduce the temperature so that they barely simmer. If you boil too quickly the potatoes will fall apart which is not good for this recipe. Next, strain your potatoes and get ready for some whipping. Now what I like to do is take 1 clove of garlic crushed, some buttermilk and heat it up with some cream, about a 5 to 1 ratio (buttermilk to cream). I find this more flavorful that the simple butter and milk method. Oh, and be careful not to overheat this mixture or it will separate. The easiest way to whip the potatoes is with an electric mixer. My favorite is the kitchenaid stand mixer but any kind will do. Using a beater attachment and a warmed bowl, add the potatoes and slowly mix to break them up. Slowly add the warmed liquid. Be careful not to add too much at the beginning. Once they spuds are smashed up, change the beater attachment to the whipping attachment. Turn on the speed and whip them to your hearts content. Take care to not to over whip them. You just want to incorporate some air into the mix. When they are nicely whipped, remove the bowl from the mixer. If you like to add some more flavorings you can do so now. Fresh chopped chives or Parmesan cheese go nicely in whipped potatoes. Serve warm with your favorite home cooked meal.
